Spire’s location, at the edge of everything, is conveniently getting more delicious by the day! First, we welcomed Michelin Stared Scratch Sushi Seattle to the neighborhood when they opened in the base of Insignia, and recently Ballard Pizza Company popped up in the Via6 Building across from the Amazon Spheres next to Victor Tavern. Now, as an added convenience to Spire residents, Mainstay Provisions has landed at 2295 7th Avenue in Denny Triangle, just 0.3 miles from Spire. This neighborhood café and market serves seasonal food and drink with daily provisions for the home.
Mainstay Provisions is the creation of Thom Koschwanez and Ashley Thompson, two Seattleites looking to build a café to meet the busy lifestyles of working locals and longstanding Ballard residents. Their goal is to provide high quality food and market items at affordable prices, while providing an atmosphere for chefs, cooks, and staff to succeed in the industry without having to sacrifice a work/life balance with a family. Koschwanez, an Ethan Stowell Restaurants chef alumnus, has been in the industry for over 25 years.
“We’re so happy to be part of a neighborhood with a great mix of residential and business buildings. Being able to imagine and design the restaurant in a brand-new building and from the ground up has been such a rewarding experience,” said Ashley and Thom recently when asked about the new Denny Triangle opening.
We caught up with the duo to ask a few things you’ll want to know before visiting…
What are the 3 most popular selling menu items?
The bacon breakfast sandwich, salted chocolate chip cookies and lattes!

The selection of wines and cheese, plus the house-made curried chicken salad.
So, what do these two choose when faced with so many great options? Well, Thom’s perfect lunch would include charcuterie and cheese while Ashley’s ideal dinner would include greens, grains, and roasted chicken.
Do you have any specialty catering menus that are popular for Thanksgiving, Christmas or New Year’s Eve?
Yes! We do order ahead meals for several holidays throughout the year, from single portion to multi-portion. We also do offsite catering and onsite venue rental.
The menu at Mainstay features soups, sandwiches, salads, and rotisserie chickens all prepared in house with unique ingredients curated to highlight techniques one usually reserves for fine dining, but prices one hopes to find at the corner store. The market selections are chosen in the same manner – a collection of local and international beers and wines, alongside specialty oils, vinegars, and other specialty items running the gamut of price point and selection. The house made breakfast pastries and desserts pair beautifully with Ladro Roasting espresso beverages.
Mornings are made easy with the Mc’Mainstay’Muffin created with a house-made English muffin, fried egg, aioli, American cheese and house-made sausage patty. Named one of Seattle’s best breakfast sandwiches, The Infatuation says, “The pork here is casually the size of a hockey puck, savory and juicy with soft bits of onion throughout the mix. And despite its burger-like girth, the sausage’s flavor is just subtle enough to support an over-medium egg and gooey cheese, all on a homemade, aioli-slathered buttermilk English muffin.”
And what about dessert? They have some of the best soft serve in Seattle. The Infatuation raves about the affogato, “The affogato is a genius invention. But when you swap out gelato for velvety soft serve, which is exactly what’s happening at Mainstay Provisions, it’s even better. Since this cafe’s freshly piped vanilla is so smooth and porous, the hot espresso poured on top steeps each bite, flavoring the ice cream throughout with bittersweet latte essence. When you require dessert and caffeination all at once, it hits just right.”
